The categories of vendors you will need
Fabrication vendors build custom stainless steel work tables, exhaust hoods, storage racks, and other made to measure equipment specific to your kitchen layout. This is usually the largest category of local spend, since almost every commercial kitchen needs fabricated components sized to its exact space.
Branded cooking and refrigeration equipment suppliers deal in ranges, ovens, fryers, and refrigeration units, either their own manufactured lines or as authorized dealers for established brands. Refrigeration in particular is worth buying from an established supplier with proper after sales service, since compressor failures are expensive and disruptive if you cannot get quick service support.
Turnkey kitchen consultants and suppliers offer end to end services, from design and layout to equipment supply and installation, and sometimes staff training on new equipment. This can be a good fit for founders who want a single point of accountability, though it is worth understanding exactly what is included in the turnkey fee versus billed separately.
How to actually evaluate vendors
